coat back after being sick with liver disease. Several years ago something like hepatitis attacked Our Dog Scout’s Liver. Luckily I stumbled onto some Liver healthy recipes that have extended his life 2 years, so far, beyond what they said he would live.

He seems happy and healthy and the vet was very surprised and suggested a second ultrasound. Well at $700 I suggested if he was that interested, he could spring for the second ultrasound. Needless to say he didn’t and I was content with the fact that he was back to his old self , just with a bit less energy. His coat, however had become very dry and brittle and he had a lot of flaking of the skin on his back. After reading of the benefits of Coconut oil I started adding a tablespoonful of extra virgin coconut oil to his home cooked meal every morning and his flaking skin cleared up and his coat is once again shiny and smooth.

I have also started adding a teaspoon to my coffee every day just for that fact that it is delicious and as a night shift worker, I can use all of the immune system help I can get!

Here are some tasty coconut oil recipes I hope you will enjoy…

Hot Cocoa ala Coconut

1 tablespoon Extra Virgin Coconut Oil

  • 1 tbsp Cocoa Powder
  • a pinch sea salt
  • 1/4 tsp of organic sugar or to taste

Start by pouring boiling water into your favorite mug and let stand for 20 to 30 seconds. Empty out the water and then add one tablespoon of extra virgin coconut into the hot mug. Stir in one tablespoonful of cocoa powder and a pinch of sea salt as the oil melts. next Add whole organic sugar to the sweetness desired. Pour in boiling water , stir, then add cream or milk to taste. This tasty treat is great for winter mornings or after a Sleigh ride!

Organic Extra Virgin Coconut Oil tastes good and is also good for you. It’s very easy to include it in all your recipes by simply substituting it with your other cooking oils.

Coconut Oil Chicken Broccoli Braid

Five To Nine Servings
Prep Time: 15 min.

Braid Crust ingredients :

  • 3/4 cup of organic extra virgin coconut oil
  • 2 cups of pastry flour
  • 1 tsp salt (regular or sea salt)
  • 1/3 cup of cold water

Filling Ingredients :

  • 1 and a half chicken breasts, cooked and chopped
  • 2 bunches of broccoli, chopped small
  • Half of a red pepper, chopped
  • 2 cloves of fresh garlic, pressed
  • 1 cup of shredded cheese – Use sharp cheddar or Monterey jack . Your choice.
  • 1 cup of mayonnaise  Mix with the rest of the ingredients to coat.

Preheat your oven to 400 degrees F.

Cut coconut oil into flour and salt until mix . Pour in water and then mix with a fork. Next, knead with your hands just until pliable.

Roll out your dough into to rectangle. 9×13, if possible however it may not stretch that much. Place the dough onto a lightly greased cookie sheet.

Combine filling ingredients and pile the mixture in center. Cut the excess of both sides of dough into strips, but DO NOT detach from center of the dough. Pull the strips up over the mixture and pinch the strips together.

Brush with a light egg wash (1 egg beaten with a little water) over the top and bake for 30-35 minutes.

Tangy Steak With Coconut Oil Marinade

Combine …

  • 2 cups of water
  • 1 cup of coconut water vinegar
  • 1 cup of apple cider vinegar or 2 cups coconut water vinegar instead of the 1 above
  • 4 whole cloves
  • 2 bay leaves
  • 2 onions, coarse chopped
  • Sea Salt & pepper to taste
  • 1 bottom round steak
  • Extra Virgin Coconut oil

Combine all of the ingredients (except for the steak and Coconut Oil) and boil briefly. Pour hot mixture over the steak and marinate overnight or about 24 hours in the refrigerator.

When ready to cook, sear both sides of the bottom round steak in the Coconut oil over medium-high heat. Reduce to medium and then cook for up to 30 minutes. Six minutes per side for rare, turn as needed to the desired doneness.

Serve it up with some nice Mango Chutney . If you want to have a very tender steak, pound the meat before marinating .
